Ingredients
  

  • 2.5 cups all-purpose flour
  • 0.25 cups granulated sugar
  • 2 teaspoons active dry yeast
  • 0.5 teaspoon salt
  • 1 cup warm milk about 110°F
  • 1 tablespoon unsalted butter melted
  • 1 tablespoon pure vanilla extract
  • 2 inches vegetable oil for frying
  • powdered sugar for dusting

Instructions
 

  • In a large bowl, combine the flour, sugar, yeast, and salt. Mix well.
  • In a separate bowl, whisk together the warm milk, melted butter, and vanilla extract.
  • Gradually pour the wet ingredients into the dry ingredients while stirring until a dough begins to form.
  • Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth.
  • Place the dough into a greased bowl, cover, and let it rise for about 1.5 hours until doubled in size.
  • Punch down the dough and roll it out to about ¼ inch thickness. Cut into 2x2 inch squares.
  • Heat about 2 inches of vegetable oil in a deep fryer or pot to 360°F.
  • Fry the beignets in batches for about 1 to 2 minutes on each side until golden brown.
  • Dust with powdered sugar and serve immediately.
  • Allow to cool slightly on a wire rack if not served immediately.

Notes

Maintaining the correct oil temperature is key. Place dough in a warm spot to rise effectively.
