Ingredients
  

Meat and Bacon

  • 6 slices bacon diced
  • 1 pound lean ground beef
  • 14 ounces smoked sausage sliced into ¼-inch thick rounds

Vegetables and Beans

  • 1 cup diced onion about half a large onion
  • 2 teaspoons minced garlic about 2 cloves
  • 1 can diced tomatoes 14.5-ounce, not drained
  • 1 can pinto beans 15.5-ounce, drained and rinsed
  • 1 can black beans 15-ounce, drained and rinsed
  • 1 can diced tomatoes and green chiles 14.5-ounce, not drained
  • 1 can whole kernel corn 15-ounce, drained
  • 3 cups peeled and diced Yukon Gold potatoes about 2-3 medium potatoes cut into 1-inch pieces

Liquids and Spices

  • 2.5-3 cups beef broth
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • salt to taste
  • ground black pepper to taste

Instructions
 

Cooking Steps

  • Dice the bacon into small pieces, then add to a large pot or Dutch oven over medium-high heat. Stir and cook until crisp, about 5-7 minutes. Remove the bacon from the pot and place on a paper towel-lined plate to drain, draining off most of the grease in the pot.
  • Add the ground beef to the pot and cook and crumble until no pink remains, about 5-7 minutes. Then add the diced onion, minced garlic, and smoked sausage, cooking until the onion is translucent and the sausage is browned.
  • Lower the heat to medium and add the diced tomatoes, pinto beans, black beans, diced tomatoes and green chiles, whole kernel corn, diced Yukon Gold potatoes, beef broth, cumin, chili powder, and reserved bacon to the pot. Season with salt and ground black pepper to taste.
  • Once bubbling, reduce the heat to medium-low and cover the pot. Simmer for 45 minutes to an hour, stirring occasionally.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and warm on the stovetop until heated through.
