Ingredients
  

Cookies

  • 1.5 cups pumpkin puree fresh or canned
  • 3 cups all-purpose flour spooned & leveled
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.75 cups unsalted butter softened to room temperature
  • 1 cup brown sugar packed light or dark
  • 0.75 cups granulated sugar
  • 1 large egg at room temperature
  • 2 teaspoons pure maple syrup or milk or orange juice
  • 1.5 teaspoons pure vanilla extract

Maple Cream Cheese Icing (Optional)

  • 3 ounces cream cheese full-fat brick, softened to room temperature
  • 2 Tablespoons unsalted butter softened to room temperature
  • 0.75 cups confectioners’ sugar
  • 2 Tablespoons pure maple syrup
  • teaspoon ground cinnamon pinch

Instructions
 

Preparation

  • Blot the pumpkin with paper towels to rid excess moisture. Let it soak up moisture in a bowl.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  • Whisk the flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and ginger together in a large bowl.
  • Cream the softened butter and both sugars together until smooth. Add the egg and mix, then incorporate the maple syrup, vanilla, and pumpkin.
  • Add the dry ingredients to the wet ingredients and mix until combined. Scoop about 1.5 Tablespoons of dough per cookie onto baking sheets.
  • Bake for 14-15 minutes or until edges appear set. Allow cookies to cool for 5 minutes before transferring them to a wire rack.
  • For optional icing, beat cream cheese until smooth, add butter, sugar, maple syrup, and cinnamon, and mix until creamy.
  • Ice the cooled cookies or store cookies without icing at room temperature or refrigerator.

Notes

Cookies develop better flavor the longer they cool; best enjoyed on day 2.
