Marinade
- 1 lb skinless chicken thighs 500g, 4 pieces
- 2 cloves garlic minced
- 0.5 teaspoon dried oregano
- 0.5 teaspoon ground cumin
- 0.5 teaspoon garlic powder
- 0.5 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1 teaspoon hot pepper flakes add more for more spicy
- 1 teaspoon lemon zest around half a lemon
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon dried whole chili loosely chopped or fresh for less heat
- coarse sea salt to taste
Cooking Instructions
Place all the ingredients into an oven-safe baking tray. Mix well so the chicken is evenly coated with spices, and then cover with some kitchen wrap.
Marinate in the fridge for at least 1 hour.
Preheat oven to 200°C / 400°F.
Bake for 40 minutes or until your chicken reaches an internal temperature of 165°F/74°C.
Season to taste with some salt. If you want your chicken spicier, add a light dusting of cayenne pepper.
