  • 3 pounds sirloin steak, cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 Tablespoon vegetable oil you may need more
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce au jus gravy mix
  • 4 tablespoons unsalted butter, thinly sliced

Preparation Steps

  • Place the sirloin steak in a large bowl and season with kosher salt and black pepper, then toss to combine.
  • Heat a large skillet over medium-high heat and add vegetable oil. Brown the steak in batches, adding more oil if needed.
  • Transfer the seared steak to a slow cooker with the sweet onion and garlic, and stir gently.
  • Pour in the beef stock and sprinkle the au jus gravy mix over the top. Add the sliced butter on top.
  • Cover and cook on high for 3-4 hours or low for 6-8 hours, stirring once every hour if possible.
  • Serve with mashed potatoes, egg noodles, or rice.

Notes

Flat iron steak is a great, less expensive alternative. This dish is excellent served over mashed potatoes, rice, or egg noodles. Slow cooking results in more tender steak bites, but browning adds great color and flavor.
