Batter Ingredients

  • ¾ cup sugar
  • ½ cup extra-virgin olive oil plus more for greasing
  • 3 large eggs
  • cup passion fruit curd for the batter
  • 1⅓ cups all-purpose flour
  • teaspoon salt
  • 1 teaspoon baking powder

Swirl Ingredients

  • cup passion fruit curd for the swirls

Preparation

  • Preheat the oven to 375°F (190°C). Oil a 9 in (23 cm) cake pan and line the bottom with a parchment round.
  • Place the sugar, olive oil, eggs, and ⅔ cup of the passion fruit curd in a mixing bowl. Stir together until completely homogenous.
  • Sift the flour, salt, and baking powder into the wet ingredients. Stir just until combined.
  • Scrape the batter into the prepared cake pan, smooth it out, and top it evenly with spoonfuls of the remaining ⅔ cup passion fruit curd. Drag the back of your spoon through the cake in figure-eights for swirls.
  • Bake for about 30 minutes, until a toothpick inserted into the center comes out clean. Let it sit for 3 minutes in the pan before inverting onto a wire rack to cool.

Notes

Don't overmix the batter and avoid overswirling for better texture.
