Ingredients
  

  • 32 oz sauerkraut drained
  • 3 tablespoons olive oil good quality
  • 1 medium size onion chopped fine
  • 1 medium size carrot peeled and grated
  • ½ apple chopped
  • 1 teaspoon granulated sugar
  • salt to taste
  • pepper to taste
  • parsley or dill for garnish

Instructions
 

  • Drain juices from sauerkraut
  • Chop all vegetables
  • Add olive oil to your sauerkraut
  • Mix all ingredients together
  • Serve cold

This salad is best served chilled and can be made ahead of time for convenience.
