Ingredients
  

  • 2 pieces chicken breasts skinless and boneless, 220g or 7oz each
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter 30g
  • 7 oz mushrooms sliced about ⅛" thick, approximately 2 full cups, 200g
  • 2 cloves garlic finely minced
  • ½ teaspoon thyme leaves
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese sliced or any cheese that melts well, 80g
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Preheat your oven to 200°C/390°F (or 180°C fan-forced).
  • Carefully cut a pocket into each chicken breast without cutting all the way through.
  • Season both sides with half of the salt and pepper.

Mushroom Filling

  • Melt butter in a heavy-based skillet over high heat.
  • Add mushrooms and cook for about 3 minutes until golden.
  • Add garlic, thyme, and remaining salt and pepper, cooking for another 2 minutes.
  • Stir in baby spinach until wilted, about 30 seconds.

Stuffing Chicken

  • Stuff the mushroom mixture into the chicken pockets and top with cheese.
  • Seal openings with toothpicks.

Searing Chicken

  • Wipe the skillet and heat oil over medium-high heat.
  • Sear each side of the chicken for about 1.5 minutes until golden.

Baking Chicken

  • Transfer skillet with chicken to the preheated oven.
  • Bake chicken for about 15 minutes or until internal temperature reaches 65°C/149°F.

Rest and Serve

  • Remove from oven, cover with foil, and let rest for 5 minutes.
  • Serve warm, ideally with side dishes.
