Ingredients
  

For the Chicken

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika

For the Soup Base

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 8 oz cremini mushrooms, sliced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon red pepper flakes optional, for heat
  • ¼ cup sun-dried tomatoes, oil-packed, drained and chopped

For the Creamy Sauce

  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil for garnish
  • Crusty bread for serving (optional)

Optional Add-ins

  • 1 cup chopped spinach or kale
  • ½ cup cooked pasta (such as ditalini or small shells)

Instructions
 

Preparing the Chicken

  • In a large bowl, combine the cubed chicken breasts with olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Ensure the chicken is evenly coated.
  • Heat olive oil in a large pot over medium-high heat. Add the seasoned chicken in batches until browned and cooked through, about 5-7 minutes.
  • Remove chicken from pot and set aside.

Building the Soup Base

  • Add remaining olive oil to the pot and reduce heat to medium. Cook the chopped yellow onion until softened.
  • Add minced garlic and red bell pepper, cooking until fragrant, about 2-3 minutes.
  • Stir in sliced cremini mushrooms and cook until softened, about 5-7 minutes.
  • Pour in chicken broth, diced tomatoes, and Rotel. Stir to combine.
  • Add Italian seasoning, red pepper flakes, and sun-dried tomatoes. Stir to incorporate.
  • Bring to a simmer, cover, and let simmer for 15-20 minutes.

Combining and Finishing the Soup

  • Return the cooked chicken to the pot and stir to combine.
  • If adding spinach or kale, stir it in and cook until wilted, about 2-3 minutes.
  • If adding cooked pasta, stir it in and cook until heated through, about 1-2 minutes.
  • Pour in the heavy cream and stir gently to combine, being careful not to boil.
  • Stir in grated Parmesan cheese until melted and soup is creamy.
  • Taste and adjust seasoning as needed.

Serving

  • Ladle the soup into bowls.
  • Garnish with chopped fresh basil.
  • Serve hot with crusty bread for dipping if desired.

Notes

For a vegetarian version, substitute chicken with chickpeas or white beans and use vegetable broth. This soup can also be adapted for a slow cooker.
