Ingredients
  

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella (low-moisture)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika (smoked or sweet)
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 0.25 cup almond flour (or 1 tablespoon coconut flour + extra egg white)
  • 1 large egg (room temp)

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Combine all ingredients in a bowl. Stir until dough forms. If too wet, add 1 teaspoon almond flour. If too dry, add a splash of cream or egg white.
  • Wet hands and roll the mixture into 12 balls (1-inch). Place them 1 inch apart on the tray.
  • Bake for 10–12 minutes until golden. Let them cool for 5 minutes as they firm up.

Notes

Use freshly shredded cheese for better puff. Allow cheese to sit at room temp before mixing. Wet hands to avoid sticky mess. Freeze extra dough or puffs; reheat at 350°F for 5 minutes to crisp.
