Ingredients
  

  • 2 cans whole kernel corn, drained
  • 1 box Jiffy corn muffin mix
  • 1 cup sour cream
  • ½ cup butter, melted
  • ½ cup honey
  • 1 cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Instructions
 

  • Preheat the Oven: Set the oven to 350°F (175°C) and allow it to fully heat while you prepare the casserole.
  • Prepare the Corn Mixture: In a large mixing bowl, combine the two cans of drained whole kernel corn, corn muffin mix, sour cream, melted butter, and honey. Stir the mixture until everything is evenly incorporated.
  • Transfer to Baking Dish: Grease a baking dish and pour the corn mixture into it. Spread the mixture evenly with a spatula.
  • Top with Cheese: Sprinkle the grated Parmesan cheese and shredded mozzarella cheese evenly over the top of the casserole.
  • Bake the Casserole: Place the casserole in the oven and bake for 40-45 minutes, or until the top is golden and bubbly.

Notes

You can use fresh corn instead of canned for an even fresher flavor. Adjust the honey to taste depending on how sweet you want the casserole to be. This casserole can be made ahead and stored in the refrigerator for a day before baking.
