Ingredients
  

For the Griddle Cakes

  • 1.25 cups all purpose flour or gluten free 1-to-1 flour
  • 1.5 teaspoon baking powder
  • 0.25 teaspoon kosher salt
  • 1 large egg
  • 0.75 cups milk of choice at room temperature (I used 2%)
  • 3 tablespoon maple syrup divided, at room temperature
  • 2 tablespoon unsalted butter melted & cooled
  • vanilla extract

For the Breakfast Sandwich

  • 6 slices bacon
  • 4 slices sharp cheddar cheese or american cheese
  • 4 large eggs
  • kosher salt & black pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400F. Line a baking sheet with parchment paper and add bacon slices. Transfer to the oven to bake for ~15 minutes, or until they've reached your desired crispiness.
  • Place bacon on a paper towel lined plate and blot off excess grease. Break each slice of bacon in half.
  • In a large bowl, whisk together flour, baking powder & salt. In a medium bowl, whisk together egg, milk, 2 tablespoon of the maple syrup, melted butter, and vanilla.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir with a spatula until just incorporated. Set aside batter to rest for 10 minutes.
  • Preheat griddle to medium heat. Optionally, transfer a small amount of batter to a squeeze bottle to pipe an 'M' for aesthetics.
  • Add cookie cutters to the griddle and grease with cooking spray. Pipe an 'M' if desired, then add about 3 tablespoon of batter on top, drizzle with 1 tablespoon of maple syrup.
  • Cover with heat-safe bowl and let cook for ~4 minutes. Flip with a spatula and cook uncovered for 2 more minutes, then remove.
  • To prepare sandwiches, whisk egg, salt & pepper. Cook each egg separately for perfect fold, adding to the griddle pan and cooking until mostly set.
  • Assemble McGriddles with 2 griddle cakes, the folded egg, cheese & bacon. Drizzle more maple syrup if desired.

Notes

For extra sweetness, drizzle more maple syrup on the pancakes before assembling the sandwiches.
