Ingredients
  

Beef Stew Ingredients

  • 2 pounds Beef Chuck Roast, cut into 2-inch chunks, excess fat removed
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Coarsely Ground Black Pepper
  • 2 tablespoons Gluten-free All-Purpose Flour or Whole Wheat for non-gluten
  • 2 tablespoons Olive Oil or avocado oil
  • ½ medium Yellow Onion, Chopped Large
  • 4 cloves Garlic, minced
  • 1 large Carrot, cut into 2-inch chunks or two small-medium
  • 2 units Yukon Gold Potatoes, diced into 2-inch pieces
  • 2 cups Beef Broth see note
  • ¼ cup Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 leaf Bay Leaf
  • 2 teaspoons Fresh Thyme Leaves to garnish

Instructions
 

Cooking Instructions

  • Preheat oven to 325° F.
  • Season the beef on all sides with salt and pepper. Sprinkle flour over and toss to coat.
  • Heat oil in a Dutch oven over medium heat. Brown the beef in batches for 3-4 minutes. Transfer to a plate.
  • Cook onion, garlic, and carrot in the Dutch oven for 2-3 minutes until lightly browned.
  • Add potatoes, beef broth, tomato paste, bay leaf, thyme, and Worcestershire sauce. Scrape browned bits from the pot.
  • Bring to simmer, stir, add beef back to pot, cover, and transfer to the oven.
  • Cook for 2-2.5 hours until beef is tender. Remove bay leaf, adjust seasoning if needed, and serve warm.

Notes

You may add 1-2 cups of water or more broth halfway through if you want more broth. Types of meat can include bottom round or rump roast, Chuck Roast, or pot roast. Optional: Add heat with cayenne pepper or chopped celery.
