Ingredients

  • 1 pound boneless, skinless chicken breasts
  • kosher salt and pepper
  • 2 large eggs lightly beaten
  • 1.5 cups seasoned breadcrumbs
  • cup finely grated parmesan cheese
  • 5-6 tablespoons olive oil
  • 4-6 buns brioche

caesar salad

  • 4 cloves garlic minced
  • 3 tablespoons greek yogurt
  • 2 tablespoons parmesan cheese
  • 1 tablespoon dijon mustard
  • 2 teaspoons red wine vinegar
  • 1 teaspoon anchovy paste
  • kosher salt and pepper
  • cup olive oil
  • 10-12 cups chopped romaine lettuce

Instructions
 

Preparation

  • Thinly slice the chicken breasts lengthwise to make thin chicken cutlets. Season with salt and pepper.
  • Place the eggs in a shallow plate. Stir breadcrumbs and parmesan in another plate.
  • Heat olive oil in a skillet over medium heat.
  • Dip chicken into egg, then breadcrumbs, pressing to adhere.
  • Cook chicken in batches until golden, about 3-4 minutes per side. Ensure chicken reaches 165°F.
  • For the dressing, blend garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt, and pepper until pureed. Stream in olive oil.

Notes

This dressing can be made ahead and stored in the fridge for 3-4 days.
