Ingredients
  

Chicken and Seasoning

  • 500 g chicken thighs skinless boneless
  • ½ teaspoon salt
  • ½ teaspoon pepper

Soup Base

  • 30 g unsalted butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 large celery stems finely sliced
  • ½ cup chardonnay or other dry white wine, optional
  • 4 cups chicken stock/broth low sodium
  • 3 cups water
  • 1 teaspoon salt cooking/kosher
  • ½ teaspoon black pepper
  • 250 g small pasta shells or other small pasta
  • 1 cup parmesan finely grated or store bought pre-grated
  • 1 cup thickened/heavy cream
  • 2 cups baby spinach chopped
  • ½ cup sun dried tomato strips chopped into 1cm pieces

Soup Thickener

  • 2 teaspoon cornflour/cornstarch mixed with 2 teaspoon water

Instructions
 

Cooking Instructions

  • Sprinkle each side of the chicken with salt and pepper. Melt butter in a large pot over medium high heat. Cook chicken for 3 minutes on one side until lightly golden, then 2 minutes on the other side, then remove onto a plate.
  • Lower heat and add garlic, onion, and celery. Cook for 3 minutes until onion is softened.
  • Raise heat and add wine, stirring until it reduces by half.
  • Add stock, water, salt, and pepper. Bring to a boil, then add pasta. Cook pasta according to package directions (~10 minutes).
  • Chop cooked chicken into 1.5cm pieces and add into the pot to finish cooking.
  • Once pasta is cooked, lower heat. Stir in parmesan until melted, then stir in cornflour-water mixture, cream, and spinach. Cook until spinach is wilted.
  • Ladle into bowls and sprinkle with sun dried tomato strips and a drizzle of oil.
  • Store leftovers separately to avoid pasta bloat.

Notes

For using breast, split each in half horizontally. For non alcoholic versions, use zero-alcohol white wine or additional chicken stock.
