Ingredients
  

Chicken

  • 2 large chicken breasts cut in half lengthwise
  • Salt & pepper to taste
  • Flour for dredging

Cooking fat

  • 2 tablespoons olive oil
  • 2 tablespoons butter

Mushrooms and seasonings

  • 12 ounces mushrooms sliced, try cremini or white
  • ¼ teaspoon Italian seasoning
  • 3 cloves garlic minced

Sauce ingredients

  • ½ cup chicken broth
  • ½ teaspoon lemon juice
  • ½ teaspoon Dijon mustard
  • 1 cup heavy/whipping cream

Instructions
 

Cooking Process

  • Cut the chicken breasts in half lengthwise to make four thinner cutlets. Season with salt & pepper and coat in flour.
  • Add olive oil to a skillet over medium-high heat.
  • Once the pan is hot, add the chicken. Cook for 4-5 minutes per side until golden, then set aside.
  • Add butter to the pan, let it melt, then add mushrooms and Italian seasoning. Cook until mushrooms are seared.
  • Remove mushrooms from the pan. Add garlic, chicken broth, lemon juice, and Dijon mustard. Stir until mustard dissolves, cook until reduced by half (about 3-4 minutes).
  • Add cream, chicken, and mushrooms back to the pan. Cook for another 5 minutes until chicken is cooked through and sauce thickens.
