Chicken
- 2 large chicken breasts cut in half lengthwise
- Salt & pepper to taste
- Flour for dredging
Cooking fat
- 2 tablespoons olive oil
- 2 tablespoons butter
Mushrooms and seasonings
- 12 ounces mushrooms sliced, try cremini or white
- ¼ teaspoon Italian seasoning
- 3 cloves garlic minced
Sauce ingredients
- ½ cup chicken broth
- ½ teaspoon lemon juice
- ½ teaspoon Dijon mustard
- 1 cup heavy/whipping cream
Cooking Process
Cut the chicken breasts in half lengthwise to make four thinner cutlets. Season with salt & pepper and coat in flour.
Add olive oil to a skillet over medium-high heat.
Once the pan is hot, add the chicken. Cook for 4-5 minutes per side until golden, then set aside.
Add butter to the pan, let it melt, then add mushrooms and Italian seasoning. Cook until mushrooms are seared.
Remove mushrooms from the pan. Add garlic, chicken broth, lemon juice, and Dijon mustard. Stir until mustard dissolves, cook until reduced by half (about 3-4 minutes).
Add cream, chicken, and mushrooms back to the pan. Cook for another 5 minutes until chicken is cooked through and sauce thickens.
