Ingredients
  

Pasta Shells

  • 12 large jumbo pasta shells

Filling

  • 2 cups mushrooms, chopped any kind of mushrooms
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning

Sauce

  • 2 cups marinara sauce
  • 1 cup parmesan cheese, grated

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  • In a saucepan, sauté the chopped mushrooms and minced garlic until soft.
  • In a mixing bowl, combine cooked mushrooms, ricotta, mozzarella, Italian seasoning, salt, and pepper.
  • Stuff the cooked shells with the mushroom filling.
  • Spread half the marinara sauce on the bottom of a baking dish.
  • Arrange the stuffed shells in the baking dish and top with remaining marinara sauce and parmesan cheese.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  • Let it cool slightly before serving.

Notes

Feel free to add additional vegetables or proteins to the filling as desired.
