Ingredients
  

Sugar Cookies

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1.5 teaspoons vanilla extract (see note)
  • 1 large egg
  • 2.5 cups all-purpose flour (Plain flour)
  • 0.75 teaspoon baking powder
  • 0.75 teaspoon table salt

Sugar Cookie Frosting

  • 3 cups powdered sugar sifted (weigh before sifting)
  • 3-4 tablespoons milk (whole milk recommended)
  • 2 tablespoons light corn syrup (see note)
  • 0.5 teaspoon vanilla extract
  • Gel food coloring optional
  • Additional candies and sprinkles for decorating, optional

Instructions
 

Sugar Cookies

  • Combine butter and sugar in the bowl of a stand mixer and beat until creamy and well-combined.
  • Add egg and vanilla extract and beat until completely combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually stir dry ingredients into wet until dough is smooth and completely combined.
  • Transfer dough to plastic wrap, cover, and mold into a flat disk. Chill for 2-3 hours.
  • Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  • Dust surface with flour, roll out the chilled dough, then use cookie cutters to cut out shapes.
  • Bake for 8-10 minutes or until edges just begin to turn lightly golden brown.
  • Allow cookies to cool completely before decorating.

Easy Sugar Cookie Icing

  • Combine powdered sugar, 2 tablespoons of milk, corn syrup, and vanilla extract and stir until combined.
  • Add more milk if frosting is too thick until desired texture is reached.
  • Divide icing to color with gel food coloring as desired.
  • Transfer frosting to a piping bag and pipe onto cookies.
  • Allow frosting to harden before storing or stacking.

Notes

Reduce vanilla extract to ¾ teaspoon and add ¼-½ teaspoons of almond or lemon extract for variation. Use light corn syrup for a firmer finish on frosting.
