- 4 medium Yukon Gold potatoes diced
- 2 medium carrots chopped
- 2 stalks celery diced
- 1 medium onion chopped
- 4 cloves garlic minced
- 6 cups low-sodium chicken broth
- 1 tablespoon olive oil
