Ingredients
  

  • 1.5 lbs Cod Fillets about 4 thick fillets
  • 2 tablespoon Olive Oil or Coconut Oil
  • Salt & Freshly Ground Black Pepper
  • 4 cloves Garlic minced
  • 1 can (13.5 oz) Full-Fat Coconut Milk
  • 1 large Lemon for both zest and juice
  • Fresh Parsley a big handful, chopped

Steps

  • Preheat your oven to 400°F (200°C). Pat the cod fillets dry with paper towels.
  • Heat oil in an oven-safe skillet over medium-high heat. Add the cod fillets and cook for 2-3 minutes until a crust forms.
  • Flip the cod and turn the heat to medium. Add minced garlic and sauté until fragrant.
  • Pour in the coconut milk and add lemon zest. Stir and let it come to a gentle bubble.
  • Turn off the burner, spoon sauce over the fish, and transfer the skillet to the oven. Bake for 10-15 minutes.
  • Remove from oven, squeeze fresh lemon juice over the fish, and sprinkle chopped parsley on top.

Notes

If you don't have cod, halibut or haddock work as substitutes. Use full-fat coconut milk for a creamier sauce. Make sure the fish is patted dry for a crispy texture.
