Ingredients
  

  • 2 ½–3 cups cooked shredded chicken about 12 oz cooked
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ⅛–¼ teaspoon chipotle chili powder optional
  • 3–4 tablespoon cilantro minced
  • 1 tablespoon salsa your favorite, red or green
  • 12 pieces corn tortillas warmed
  • olive oil or cooking spray

Instructions
 

  • Preheat the oven to 375 degrees F. Grease a baking sheet with spray olive oil or brush with olive oil.
  • Make filling by stirring together chicken, spices, cilantro, and salsa. Stir to combine. The mixture should not be very wet.
  • To assemble, warm tortillas slightly.
  • For each taquito, spoon about 3-4 tablespoon of the chicken mixture down the center of the tortilla. Roll up tightly and place seam side down on a greased baking sheet.
  • Brush the tops with a little olive oil or mist lightly with spray olive oil.
  • Bake at 375 degrees for 12-15 minutes, or until the edges are just starting to brown. Serve with your favorite salsa, guacamole, or taco toppings!
