Ingredients
  

  • 1.25 cups mashed very ripe bananas about 3 large bananas
  • 2.5 cups quick oats make sure to use quick oats
  • 2 tablespoon maple syrup or more as needed to taste
  • 1.25 cups fresh blueberries

Instructions
 

  • Preheat oven to 350°F (177°C). Line an 8 inch by 8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  • Add mashed bananas, quick oats and maple syrup to a large mixing bowl. Mix with a spatula until everything is evenly combined. Taste and add more maple syrup if desired. The mixture should be thick and moist.
  • Divide the oat mixture in half. Add one half to the prepared baking pan and spread it evenly across the bottom.
  • Blend blueberries in a small high powered blender until it becomes a thick liquid. Carefully pour the blueberry puree over the oat mixture and spread it evenly.
  • Place the remaining oat mixture on parchment paper, shape it into a thin square to cover the blueberry puree. Use a spatula to lift and place the oat mixture crust on top of the blueberry puree.
  • Bake for about 30 minutes or until golden brown. Let cool fully before cutting and serving.

Notes

These bars are lightly sweetened; add more maple syrup or sugar to taste. Finely mash bananas, using a whisk for fewer lumps. Use quick oats for better binding.
